Imli Ki Chutney

INGREDIENTS

  • 1 jar of imli (tamarind) concentrate, 14 ounces (not Tamicon)

  • 3 cups sugar

  • ⅛ tsp roasted zira powder (roasted cumin powder)

  • A pinch of mirch (chili powder)

  • A pinch of kala namak (black salt)

  • Water, as needed

INSTRUCTIONS

  1. Add imli concentrate and sugar to a nonstick pot and cook on medium-low for ~20 minutes.

  2. Add roasted cumin, mirch, and kala namak. Stir.

  3. Cook for an additional 5-10 minutes or until chutney is at desired consistency. Add water as needed.

NOTES

  • I recommend the imli concentrate that come in a glass jar like Joy or Swad. They are medium brown in color. Avoid getting Tamicon which is almost black in color and extra concentrated–you will need a LOT of sugar to counteract how tart Tamicon is

  • To test for consistency, put a small amount in a bowl and let it cool. If it is too thick, add some water to the pot. If it is too thin, keep cooking the chutney.
