Banoffee Pie

INGREDIENTS

Crust

  • 14 graham cracker sheets (or 28 squares if you get the fresh stacks)

  • 1 stick melted butter

  • ¼ cup brown sugar

  • Pinch of salt

Filling

  • 1 can sweetened condensed milk (to make dulce de leche or you can just buy it from the store)

  • 3ish ripe bananas, sliced

  • 2 cups heavy whipping cream

  • 4 tbsp confectioners sugar

  • Splash of vanilla

INSTRUCTIONS

Make the crust

  1. Finely grind graham crackers in the food processor

  2. Add salt and brown sugar and pulse to combine

  3. Stream in melted butter and pulse until combined

  4. Pour graham cracker mixture into a greased pie plate and press until you form a solid crust

  5. Bake at 350° for 10 mins

  6. Cool before putting in filling


Making the filling

  1. Make the dulce de leche:

    • Remove top from the can and cover with foil tightly

    • Place on trivet of in the Instant Pot

    • Fill the Instant Pot with water until halfway up the can

    • Pressure cook on high for 35 mins

    • Wait until can is fully cooled before handling

  2. After the can is cooled, spread half the dulce de leche

  3. Layer sliced bananas

  4. Spread the other half of the dulce de leche

  5. Chill for a few hours or overnight

  6. Make whipped cream with heavy whipping cream, confectioners sugar, and vanilla

  7. Top chilled pie with whipped cream

  8. Chill for 30 mins then serve!
