Banana Bread
INGREDIENTS
1½ cups sugar
½ cup canola oil
2 eggs
1½ cups mashed ripe bananas (3-4)
½ cup plain yogurt (don’t use greek yogurt)
1 tsp vanilla
2½ cups all purpose flour
1 tsp baking soda
1 tsp salt
1 cup chocolate chips (optional)
INSTRUCTIONS
Preheat the oven to 350°F and move one of your oven racks into the lowest position.
Mix sugar and oil in a large bowl.
Stir in eggs until well blended.
Add mashed bananas, yogurt, and vanilla.
Beat until smooth (I do this by hand with a spoon, you don’t need a hand blender or mixer).
Stir in remaining ingredients except chocolate chips just until mixed.
Stir in chocolate chips (optional!)
Pour in two loaf pans that have been greased.
Bake 8 inch loaves 45-50 minutes (could take an hour).
Poke with a fork or toothpick. If it comes out clean, then it’s done, if it doesn’t then put it back in for a little longer
Transfer out of the pans within ten minutes (if you wait until it gets cool then it’s difficult to get out).
If not serving immediately, wrap tightly in plastic wrap and refrigerate (up to 10 days but let’s be real, it won’t last that long).
